Veggie Scramble with Skillet Potatoes and Chia and Flax Seed Toast with Butter and Fig Spread

 

Ingredients:

  • Yukon Gold potatoes, cubed
  • Eggs
  • Mushrooms
  • Onions
  • Zucchini
  • Squash
  • Salt
  • Pepper
  • Garlic powder
  • Thyme, fresh
  • Rosemary, fresh
  • Butter
  • Olive oil

Instructions:

  1. In a large skillet, cook veggies and potatoes in butter and olive oil
  2. In another large skillet, scramble eggs.
  3. Before the eggs are completely scrambled, add veggies and potatoes.
  4. Finish scrambling
