Organic Multigrain Pancakes with Flax and Banana Compote

The pancakes were from a mix so that was super simple. Here is how I made the compote:

 

Compote Ingredients:

  • 1 tsp. butter
  • cinnamon
  • agave nectar
  • banana
  • raisins

Compote Directions:

  1. Melt butter in small saucepan on low heat
  2. Add agave nectar
  3. Add sliced bananas and raisins
  4. Cover and let simmer and stir

Notes:

In my home, we do not drink regular milk. Humans are the only mammals on Earth who willingly drink milk past infancy. Not even cats are supposed to drink milk, though humans love giving it to them for some reason. Milk promotes phlegm, which harbors viruses like the common cold, and with the hormones and chemicals in non-organic milk, there are lots of other reasons not to drink milk. Even the organic kind. Do your research and learn why you should cut cow's milk out of your diet, immediately. As a personal note, no one in my home has been sick for over 7 years since we stopped drinking milk. I do love butter, cheese, and other dairy products so we limit our intake to less than one cup every  week.

The following day, when I made this again, I added the compote ingredients into the batter (minus the butter)  and enjoyed the pancakes that way!
