I love polenta.
The concept behind polenta is simple and it is one tried and tested around the world. This simple mixture of corn meal, water, salt, and butter takes on many forms, depending on where you are in the world.
Growing up in the Virgin Islands, we call it Fungi and it is served in a thick, porridge consistency.
Well, sometimes, when I'm lazy and hungry, I opt for ready-made organic polenta. At my local grocer, it comes in a handy tube, which makes the perfect shape for polenta cakes. I fried them in olive oil and served them with chicken patties and baby spinach.
Look for ready-made polenta at your grocers and save some time and energy!
