Earthy Mushroom Seed Chicken Salad


  • 1 chicken breast
  • ¼ red onion
  • 2 eggs
  • ¼ cup nuts or seeds
  • ½ cup mayo
  • ¼ cup mushrooms
  • salt
  • pepper
  • garlic powder
  • butter and/or olive oil


  1. Season chicken breast.
  2. Heat skillet on medium heat with butter and/or olive oil.
  3. When pan is hot, place chicken in pan and cover. Cook for 5 minutes on each side. Remove from heat.
  4. Simultaneously, boil eggs on high heat for about 10 minutes. Remove from heat. Cool with cold water and shell.
  5. Chop chicken, onion, eggs, and mushrooms. Place in large bowl. Season to taste.
  6. Add mayo and mix.
