Chicken Soup

Chicken Ingredients:

  • 1 whole chicken
  • sea salt
  • ground black pepper
  • garlic powder
  • onion powder
  • herbal chicken seasoning blend
  • olive oil
  • butter


Chicken Instructions:

  1. Preheat oven at 350º.
  2. Rinse chicken, being sure to check for and remove its bag of entrails from within the carcass, if included. You may discard or clean and cook these, as well.
  3. Place chicken in roasting pan and season to taste, adding olive oil to assist in the distribution of the seasonings. Be sure to season under the skin.
  4. Place 2 pats of butter on the skin on both sides of the chicken.
  5. Cover roasting pan and place in a oven for 45 minutes.
  6. After 45 minutes, remove cover and empty drippings into a quart/soup pot, leaving just enough in the roasting pan for basting.
  7. Baste chicken with remaining drippings until brown. Turn chicken over and repeat.
  8. Remove roasting pan from the oven after 15 minutes of basting and place on stovetop to cool.
  9. After chicken has cooled, remove legs and thighs, as well as the wings, and set aside in a sealable container.
  10. With a large chef’s knife, cut chicken down the middle and continue to strip meat from carcass with a fork. Set the rest of the shredded meat.

Chicken Stock Ingredients:

  • chicken drippings
  • chicken carcass
  • 2 cups chicken shreds
  • 6-10 cups water
  • sea salt
  • ground black pepper
  • peppercorns
  • garlic powder
  • onion powder
  • herbal chicken seasoning blend
  • fresh vegetables (onions, carrots, peas, etc.)
  • fresh beans
  • potatoes


Chicken Stock Instructions:

  1. Add stripped carcass to soup pot with drippings. 
  2. Add water.
  3. Add seasonings.
  4. Add fresh beans if part of your recipe.
  5. Cover and simmer at medium-low heat for an hour and 45 minutes.
  6. Remove carcass from stock.
  7. Add potatoes and simmer for an additional 15 minutes.
  8. Add vegetables and continue to simmer until all elements are fully cooked.
  9. Add shreds of chicken and save the rest for another meal.
  10. With all ingredients combined, let rest, then serve.


Dumpling Recipe Ingredients:

  • 3 cups flour
  • 3 tbl cold butter, diced
  • 1 tsp sea salt
  • 1 cup water


Dumpling Instructions:

  1. In a large bowl, add flour and salt. Blend.
  2. Add butter
  3. Add water
  4. Mix ingredients with fork until mostly blended, then kneed until desired consistency. 
  5. Sprinkle countertop with flour, move dough to counter and continue to kneed until butter is fully incorporated.
  6. Pinchdesired amount of dough and shape into balls, 1 1/4 inch oblongs, or other desired shape.
  7. Cover with wet dish towel until ready to use dumplings.
