Black Eyed Pea Burgers

Ingredients:

  • 4 cups black beans
  • 1 cup onions, chopped
  • 1 cup celery, chopped
  • ¼ cup garlic, minced
  • 1 cup baby bell mushrooms, diced
  • 4 teaspoons kosher salt
  • 2 teaspoons black pepper, freshly ground
  • 2 teaspoons garlic powder
  • 4 cups panko bread crumbs
  • 2 eggs, whipped
  • ½ cup olive oil

Preparation: 

  1. Soak peas overnight or up to 24 hours
  2. Boil peas until soft
  3. Drain and mash peas in large mixing bowl
  4. Add all other ingredients (except oil) and blend with utensil, then hands
  5. Form mixture into tightly packed balls, then flatten into patties
  6. Heat olive oil on medium heat in large frying pan
  7. Place patties in pan
  8. Cook for 3-5 minutes on each side or until brown

Notes:

I served these patties on a bed of farrow with a Chipotle BBQ Mayo sauce, made my just mixing chipotle bbq sauce with vegan mayo. Later in the day, I served over a bed of raw baby spinach with a lemon dill yogurt sauce. These patties are extremely versatile!
