BBQ Chicken with Garlic Mash and Black Eyed Peas

This is simple and one of those heavy meals I love on a chilly Fall evening.  


  • Chicken
  • BBQ sauce
  • Yukon Gold potatoes, cubed
  • Garlic, diced
  • Salt
  • Pepper
  • Butter
  • Garlic


  1. Boil or bake Yukon Gold potatoes
  2. Season chicken with salt, pepper, and garlic.
  3. Smother chicken in BBQ sauce.
  4. Cover and bake at 450˚ for 20-35 minutes
  5. Uncover and bake for another 15 minutes.
  6. For the (real/fake) mashed potatoes, follow the instructions on boxed mashed potatoes
  7. Add cooked, chopped potatoes.
  8. Add butter, salt, pepper, garlic, and whip with hand or electric whisk

I added a a side-salad with avocado and blue cheese.
