Homemade Ginger Ale

Ingredients: 

  • 1 ½ cups chopped peeled ginger (7 ounces)
  • 2 cups water
  • 3 tablespoons raw honey (or ¾ cup sugar)
  • 1 quart chilled seltzer/club soda/sparkling water
  • 3 tablespoons fresh lime juice

Instructions:

Make Syrup:

  1. Simmer ginger in water in a small saucepan, partially covered for 45 minutes.
  2. Remove from heat and let rest, covered, for 20 minutes.
  3. Strain mixture into a bowl, using a colander, cheese cloth, or kitchen towel.
  4. Discard ginger.
  5. Return mixture to saucepan, and honey and a pinch of salt. 
  6. Heat over medium heat, stirring, until honey dissolves.
  7. Chill syrup in a covered jar until cold.

Assemble Drinks:

  1. Mix ginger syrup with seltzer and lime juice
  2. Start with ¼ cup syrup and 1 ½ teaspoons lime juice per ¾ cup seltzer, then adjust to taste.
